Ash runs his own Jamaican catering company, and for this trip he and his team put together a Jamaican buffet: jerk chicken marinated for 48 hours and smoked low and slow, a coconut 'ital' stew, rice and peas done properly, fried plantain, the works. Real Jamaican cooking runs on allspice — locals call it pimento — warm and a little sweet, somewhere between clove and nutmeg, balanced against the fruity heat of Scotch bonnet peppers, fresh thyme, ginger and garlic. It's spicy without being just spicy: bright, warm and layered.

Step aboard the Curaçao, our spacious 1951 boat with a big sundeck – your floating living room on the canals. Take off your shoes, get comfortable and make yourself at home.
